Is Veganism gonna cost me a fortune? #BeingWell

I've been consumed by this dilemma quite a lot in the recent days, whilst I'm deriving inspiration from these amazing nutritionists and fitness experts from YouTube & their blogs but am unable to transition into a mode which will allow me to eat a complete low-carb or occasional vegan diet.

Let's say, for example, I've been following up on the rates for avocados lately and it has gone up to Rs. 450 FOR EACH! It's absolutely absurd. But anyways I've found my hacks around to having a low-glycemic diet to improve my health because what is life without good health.
Pouring in some background here before indulging in this discussion any further - I have a history of PCOS since 2016, its been a few years since I have been dealing with the situation on and off. When it had initiated I was in Australia and only 16 years old due to which my health consultants recommended a non-medical based treatment (diet-control & exercise) until I was at least 22 years old before incorporating any medications to treat the syndrome. Now that I'm 25 years old, I still deal with this health concern on and off between years, considering the stressful work routine and trying to balance a healthier eating lifestyle it does get a little too much to digest.
Anyways, so I've continued to improve my lifestyle with more optimism, incorporating more greens and fruits, limiting the sugary intake i.e. desserts, fizzy drinks, etc (occasionally consuming these is not a crime), strictly sticking to fitness - varying between 3-4 times at the gym and lastly, trying to keep myself away from STRESS as much as possible.

About a week ago, I kick-started a conversation on one of the popular social groups on Facebook based around: "Why is so expensive to eat better in this country?' Well, I should have phrased it better, since eating healthier can be expensive all around the world. But the real challenge comes when you need to gather the ingredients, let's suppose for a Garbanzo Bean Salad? You'll have to run to 3 stores to grab the essentials you need.
Moreover, hunting plant-based ingredients is another nuisance in itself, with very few brands producing almond/soy/coconut/oat milk I literally developed a headache trying to contact the local entities, getting hands of their menus and placing an order. Sigh! Everything is great but the hassle remains a big part of going vegan or partially vegan.

But let's pause the ranting here & proceed towards the next step: "How to counter these issues" - so I've developed a breathable solution for myself to prepare meals for the work week & also ensure my intake of nutrients/ proteins/essentials that are required for being well and healthy.
