Easy Work-Week Lunches + Delicious Desserts

I’ve been quite adamant on consuming a healthier diet since the past month, also since Ramadan is approaching in almost a month from now on I feel that it’s the perfect time for me to incorporate a more preferred eating pattern with lots of rainbow in my diet – veggies, fruits, protein.


So in the earlier weeks, I had prepared this delicious tasting hummus that took me longer than expected to prepare since I'm quite a noob in the kitchen. However, the end result motivated me to cook more often, at least the foods that I enjoy and love. Well, followed by this courageous kitchen lesson I moved on to making the most delicious dark chocolate pancakes, the recipe again came from Tasty.Co – message below or DM on Instagram for the recipe. It was such a beauty I can’t even find the words to express my love for it. Absolutely scrumptious.


I also prepared dark chocolate chips banana bread, using a recipe from their platform which was another success, led me to share the recipe to multiple people across platforms and in-person also. It had the perfect combination of ingredients, cooking time and details. The best thing about it? Its super healthy, affordable ingredients, to be prepared in an hour (including cooking time). I used the bread across about 2-4 days, served it with chocolate/maple syrup and strawberries since we’re blessed with plentiful during this time of the year.

And readers, behold your excitement, one of my most recent attempts included the best – literally – “the best one bowl brownies” by Tasty.Co, I mean they’re fantastic in ALL aspects and do a marvelous job with sharing the love through food across the globe.

Anyways, jumping to the healthier part – so since the past week, I’ve been bringing chickpea salad with all the available greens in my fridge. So I had boiled the chickpeas (great source of fiber and alternate for people suffering from PCOS) on Sunday evening and distributed it amongst 5 boxes for the week. In each box, I made a slight variation so the same meal doesn’t bore me to death.


Box 1/2/3: Chickpeas + broccoli, tomatoes, cucumber, lettuce, cabbage, beetroot, carrots, coriander leaves, thyme/oregano/basil herbs and dressed it in lemon + olive oil + pepper + chaat masala – we all love our spices.

Box 4: Chickpeas + broccoli, tomatoes, cucumber, beetroot, carrots, mint leaves, herbs (as mentioned above) and onions. Dressed with lemon + olive oil + chaat masala.

Box 5: Chickpeas + Lentils (Yellow Daal + Kaddu – it was made at home so I incorporated it in the existing vegetarian mixture) + broccoli, tomatoes, cucumber, beetroot, carrots, herbs (as mentioned above) and onions. Dressed with lemon + olive oil + chaat masala.


It’ll be beneficial to add that a low GI diet is recommended for people suffering from PCOS, hence considering food items such as sweet potatoes, legumes – chickpeas, lentils, etc are great food sources for us. Plus they're so easy to make also! It’s a win win for everyone.
